Bulgur is a food made from wheat. Bulgur, which is consumed in Middle Eastern and Mediterranean cuisines, is considered as a grain group and is located at the bottom of the food pyramid.
According to Bethany Kehdy, the strongest claim about the origin of the word bulgur is that it derives from the word “palkhurd”, which means crushed or pebbles in Kurdish. However, today’s Kurds say “repel it”. Etymologically accepted that its origin is based on Iranian languages, bulgur is passed to Arabic as “burghul” and from Arabic to Turkish. The word bulgur in Turkish has spread to European languages just like English.
Wheat, the main ingredient from which bulgur is made; It consists of 3 parts as core, bran and endosperm, and most of the necessary nutrients are located in the core and bran section. Endosperm is only the energy-giving part of wheat and of course bulgur with the starch and less proteins it contains.
